Shaahi Paneer
Ingredients:
(For 2 Persons)
Medium sized Tomatoes- 3
Cashew nuts (kaju)- 10 to 12
Milk- 1/4 cup
Cream (malai)- 2 tbsp
Paneer- 100 gm
Oil- 2 tbsp (1 tbsp for gravy, 1 tbps for stir frying veggies)
Butter- 1 tbsp
Onion- 1
Garlic- 2 cloves
Ginger- 2 small pieces
Green chillies- 2
Small Capsicum- 1
Red chilli powder- 1 tbsp
Turmeric powder- 1/2 tsp
Garam masala- 1 tsp
Coriander powder- 1/2 tsp
Salt
Kasuri Methi- 1/2 tsp
Cinamon (dalchini)- 1 small piece
Tej patta (bay leaf)- 1
PROCESS:
- Soak the cashew nuts in 1/4 cup water for 30 minutes and after 30 minutes grind the cashews with the same water to make a smooth paste.
- Now in a pan put water to boil the tomatoes. Boil the tomatoes for 2-3 minutes and after it cools down peel the skin of tomatoes and remove extra seeds from it and cut them into pieces.
- In a jar take the tomato pieces and grind it to make a paste.
- Chop 1 green chilly, 1 piece of ginger, garlic and 1/2 onion.
- Now take a pan and put on the gas. Put oil and butter in it and add tej patta and cinamon in it.
- After it heats for few seconds add chopped ginger, garlic, green chilly and onion in the pan and stir fry it for 1/2 minute on slow flame.
- Then add all the masalas (spices) and tomato puree (paste) into it and cook the gravy until oil separates from the gravy.
- After that add 1/4 cup water, cashew nut paste, cream and milk in it and stir it well.
- Cook the gravy for 2-3 minutes. Meanwhile stir fry the vegetables (capsicum, onion, green chilly and ginger).
- Add Paneer cubes, stir fried vegetables and kasuri methi into the gravy.
- Serve the Shaahi Paneer with Naan or Tandoori Roti.
